The Colomba Pasquale now occupies a very respectable place in Italian gastronomy and today represents an excellent production of Zaghis pastry.
The dove is a delicate cake, it must be soft, fragrant on the outside and moist on the inside and must be naturally leavened for a whole night. The next morning a second dough is made and mixed with flour, sugar, eggs, and candied fruit. After half an hour of rest, the dough is portioned into different pieces; after four hours of further leavening, they are covered with sugar paste, almonds and amaretto. After cooking they rest for at least 7 hours and are then packaged. This is the true story of every Zaghis dove. Country of origin: Italy
